Ricotta Toast with Fig, Honey and Pistachios

- 1 slice wholegrain bread, toasted
- 1 fresh fig, quartered (or use dried figs)
- 3 tbsp ricotta
- 1 tsp honey
- 1 tbsp pistachios, chopped
- Finely grated zest of ½ lemon
Method
- Spread the ricotta over the toast and top with the figs.
- Drizzle with honey and sprinkle with pistachios.
- Finish with lemon zest.
