Greek Yoghurt Bowl with Fruit, Nuts and Honey

Greek Yoghurt Bowl with Fruit, Nuts and Honey

Ingredients

Serves: 1

Prep: 5 mins

  • 150g Greek yoghurt
  • 1 small banana, peach or a handful of berries
  • 1 tbsp toasted nuts
  • 1 tsp honey
  • 1 tbsp oats (gluten free if you're following the gluten free plan)- toast if you like
  • 1 tsp tahini or nut butter

Method

  1. Spoon the yoghurt into a bowl and top with sliced fruit.
  2. Scatter over the nuts and oats, then drizzle with honey and tahini or nut butter.

Using healthy fats from extra virgin olive oil and nuts, using a proportion of whole meal flour, using berries and keeping the sugar lower (or even replacing with date sugar) makes this cake a bit healthier than standard recipes. If you use only date sugar, add a bit more yogurt as date sugar absorbs liquid.

Herbed Salmon Rolled in Vegetables

This is one of those quietly brilliant healthy recipes that earns a permanent place in the winter rotation. Field Doctor chef Matt Williamson calls it a home recipe he makes a lot in winter, and it is easy to see why. Bite sized salmon is seasoned with herbs, lemon zest and olive oil, then wrapped in ribbons of courgette or marrow and roasted until just cooked and lightly golden. The fish stays tender, the veg turns soft and sweet, and the lemon keeps everything fresh and lifted. It looks impressive but it is genuinely straightforward, and it hits that sweet spot when you want a lighter meal that still feels warm, satisfying and properly dinner. Serve with roast or boiled potatoes and a spoon of sour cream or crème fraîche if you fancy.
